COMO enters the French Riviera with the revival of Belle Époque landmark Le Beauvallon. White Elephant Aspen is set to introduce a modern mountain aesthetic to the area with a contemporary 54-room hotel that layers leather and stone design elements with local artwork. Located inside Yamashiro Miami — the Los Angeles institution’s first expansion in its 111-year history — on the ninth floor of Gale Miami Hotel & Residences, 400 Vinyl Room pays tribute to the storied “400 Club,” a private dining enclave that once hosted Hollywood’s elite. The music-driven lounge draws inspiration from Tokyo’s underground record cafés. The 50-seat space matches up classic cocktails with a vinyl program spanning funk, soul, disco and ’80s Latin.

From founder Simon Kim, Gracious Hospitality’s ambitious 550 Madison introduces a 15,000-square-foot multi-concept dining destination. At Fontainebleau Las Vegas, Cantina Contramar brings chef Gabriela Cámara’s Mexico City classics to the Strip. Tableside presentations, ceviches, aguachiles and raw-bar offerings complement wagyu carne asada and shareable plates such as Pescado a la Talla Contramar-style. Tequila Casa Dragones is collaborating with the chef on cocktails, pairings and flights.

Opening in Midtown, Carver Road Hospitality’s Carversteak makes its New York City debut, transporting Vegas steakhouse swagger to West 48th Street as a pre- and post-theater spot. Chef Charlie Palmer makes his Central Coast debut with a trio of concepts at Paso Robles Inn. The now-open Cattlemen’s Bar reimagines a storied 1942 cowboy watering hole with ranch-inspired fare and a Tecovas boot bar. In May, Salina Rooftop debuts as the region’s only rooftop bar, highlighting Southern Italian spirit through coastal cocktails and small plates inspired by the nearby Salinas River. This summer brings The Pass by Charlie Palmer, a modern tavern with prime cuts, seafood and seasonal produce.

Gaia makes its U.S. debut with chef Izu Ani’s globally acclaimed, celebrity-loved Greek-Mediterranean cuisine, already popular in Dubai, Monte Carlo and London. SingleThread makes its international debut with this 12-seat counter experience inside Capella Kyoto in the historic Miyagawa-cho district. Blending Sonoma’s farm-driven philosophy with Kyoto culinary traditions, the multicourse menu highlights seasonal ingredients from Northern California and Kansai. A lounge for teas and cocktails and the SingleThread Entremets patisserie complete the reflective dining destination.

SushiSamba returns to the U.S. with a West Hollywood rooftop showing off its signature Japanese precision with Brazilian and Peruvian flavors. Expect sashimi, ceviches and robata-grilled specialties alongside signature samba rolls such as the wagyu-topped Samba LA. Set within an 11,000-square-foot open-air space by Dizon Collective, the space features sculptural umbrellas, terrazzo floors and a retractable roof opening to panoramic views of the Hollywood Hills.
